banana oat muffins 香蕉燕麥鬆餅



DRY INGREDIENTS
100 g self raising flour & 1/2 tsp baking powder
OR: 100 g all-purpose flour & 1 tsp baking powder

50 g quick cooking oats

1/2 tsp baking soda

1/4 tsp salt

50 g white sugar/ brown sugar

WET INGREDIENTS
1 small egg

105 ml milk

45 ml (3 tbp) vegetable oil

1 ml (1/4 tsp) vanilla extract

1 mashed banana

TOPPINGS 
Mix some brown sugar with cinnamon powder

DIRECTIONS
Combine flour, oats, sugar, baking powder, soda, and salt.
In a large bowl, beat the egg lightly.
Stir in the milk, oil, and vanilla.
Add the mashed banana, and combine thoroughly.
Stir the flour mixture into the banana mixture until just combined.
Fill cups at 2/3 full.
Scatter the toppings.
Bake at 190 degrees C for 20-25 minutes .
